On your stay at Finca Carmen you may on occasions be able to enjoy some complimentary evening meals. If you wish to "have your name thrown in the pot" (Joe's Irish expression for cooking your extra portions), for an evening meal, let us know in advance. We especially enjoy big flavour one pot style dishes. Brenda, with her cookery qualifications and skills has collected and cooked some interesting recipes from around the world, along with typical Spanish cuisine. Our favourites are classic influenced Moorish and North African dishes.

Special Occasions: For a special evening Brenda can cook a full menu for you. My celebration birthday dinner party in April 2009 was... 

Grilled Mussels with Chorizo, topped with Gremolata;  Clams, Thai Style flavours, with onion, garlic, ginger, and chilli;  Pork Belly with white beans, quince and garlic toast;  Carmelised Oranges with anise.               All washed down with copious amounts of white and red Rioja and Cava.

The recipes came mainly from the Chef, Thomasina Miers, whose ideas are highly influenced by Spanish and Mexican inspiration and bursting with flavours.  All cooked to perfection by Brenda.
